Holiday Recipe 2012 - Fava Bean Hummus

Fava Bean Hummus

1 tbls – reggiano cheese, grated
½ tsp – kosher salt
½ tsp – cracked black pepper
2 tsp – lemon juice, fresh
1 pound – fava beans, cleaned, blanched
¼ pound – baby arugula, cleaned
¼ cup – extra virgin olive oil
¼ tsp – garlic, finely chopped

Serves 4-6 people

Method of Preparation
To begin, make sure the outer layer is removed from the fava beans. Blanch the beans in boiling water for 1 minute and place in ice water to bring temperature down. Drain completely and combine the beans, arugula, garlic, salt and pepper, and olive oil in a food processor, puree until smooth, but slightly chunky. Next, transfer the mixture to a stainless steel bowl, mix in the reggiano and lemon juice by hand. Season with salt and pepper to taste and serve with grilled pita, fresh vegetables or your favorite dippers.
